I've been outside raking & picking up leaves. I just did the courtyard & the trashcart is 3/4 full. We have a 39 gal bag & a 30 gal bag of trash to put in the cart but they'll probably pack down the leaves & fit ok. Basically, businesses here are closed today, if they aren't retail or restaurants.

I gave the squirrels a small handful of almonds in addition to their usual peanuts. Almond trees don't grow around here, so I doubt they ever had any of those before. You should have seen them picking through the peanuts to get those almonds first.

We decided on Carl's Jr for a late lunch/early dinner. They have signs on the doors & cash registers announcing some food items are out of stock. No idea 'what'. We passed our vet's office on the way. I see they are once again curbside only.

A fair number of people are wearing masks here, but they do it out of choice. We have 4 TVs in this house (yeh, we're never far from background noise ), and each one has a cable box. As of this evening, we have 3 cable boxes that have run out of steam, so we only have one working TV. It's in the living room. My mission is to call the cable company in the morning and see if they're open. If they are, I'm heading off to swap cable boxes. I have a 2-lb eye of round roast thawing in the refrigerator for Christmas dinner, and a pound of cod fish also thawing in the refrigerator for Christmas Eve dinner. Edward cut up a half dozen jalapenos. He's planning to make some candied jalapenos tomorrow, just for fun. The recipe called for 2-1/2 cups; the 4 he chopped up equaled about a cup and a half, so I'll pick up an additional half dozen while I'm out in the morning. We had a new member join today. His name is toddo777, so if you see him around the board you might welcome him. You know, SW Oklahoma is much closer to the Native American cultures and the Hispanic cultures due to our location than we are to Icelandic people groups (& for convenience, I'm including all the far northern countries in that 'Icelandic' term). So, while the pest control man and I were going around the big apartment complex a couple weeks ago - and talking about Christmas coming up - I was really surprised when he commented that his family is Hispanic, but his wife is Norwegian and her family has some really different customs, which he had to get used to once they were married. <-- that was my reaction, you know what I was thinking of. I asked him if he'd ever heard of "lutefisk" - ? <-- that was his reaction. We had a great chat. His wife has eaten/would still eat lutefisk, but he can't get it past his nose so he absolutely refuses. He admitted he made himself try it once, but he had to run into another room and spit it out and rinse his mouth. He was trying to be quiet but was basically gagging on the taste & smell, till he rinsed his mouth a couple of times. We had a good laugh over that. A few days later, I came across this article on the history of lutefisk. It's intersting, so I'll post it in its own thread here in Anything Goes. <-- This article motivated me to look for a good codfish recipe to fix for Christmas Eve dinner ... not that it would be 'lutefisk', or even 'lutefisk-ish', just that it would be a tasty codfish dish (we like codfish but I haven't fixed any in months). So there you have the rest of the story.

We kept four grands overnight. 3 boys “slept” in one room & grand daughter & I “slept” in another room. DH got to sleep in his bed. lol I was actually surprised the boys settled down around 11 pm & the girl finally stopped talking around the same time.
Mel, those friendly squirrels sound so cute! Now you may also be getting them walnuts to try!

Good morning! It is a chilly 31 degrees here this morning with a wind chill of 23. I hope you all are having a happy and blessed Christmas Eve. A few days later, I came across this article on the history of lutefisk. It's intersting, so I'll post it in its own thread here in Anything Goes. <-- This article motivated me to look for a good codfish recipe to fix for Christmas Eve dinner ... not that it would be 'lutefisk', or even 'lutefisk-ish', just that it would be a tasty codfish dish (we like codfish but I haven't fixed any in months). So there you have the rest of the story. I knew I was forgetting something! I never gave our old Lutefisk thread its traditional annual bump at the beginning of December. Mel, those friendly squirrels sound so cute! Now you may also be getting them walnuts to try! They love Walnuts, but they get plenty of those on their own. Both Black Walnut trees and English Walnut trees grow all over the place around here. I don't have any Walnut trees in my yard, but I often have to sweep Walnut shells off of my porch where the squirrels bring them from a few lots over. They also drag big pine cones from down the street and pick them apart on my porch to get the little seeds out of them.

Good morning! It's 56 degrees here, heading for 85 this afternoon. Lots of sunshine. The cable repair section boosted our power and one of the cable boxes came back on. Thankful for small favors. I'm happy to see the old lutefisk thread is back! Yay! Just a thought - and then I've got to feed these dogs who haven't had breakfast yet ... If you use either of these: watch out for the neighbor's dog that likes sweets! Hope you each and all have a wonderful and blessed Christmas Eve!

I ordered out for a pepperoni, sausage, and mushroom pizza for my lunch.
After that I plan to take it easy until time for my church's Christmas Eve service this afternoon.

I had a really good afternoon of cooking. I've been wanting to stretch my knowledge and skills and today I did that. I put together a Christmas Eve Salad (Ensalada de Noche Buena). It wasn't hard to do, it simply took time and care. It was different in that it mixed fresh and canned vegetables and fruits, and it included seeds and nuts. There were several steps, and the outcome was a pretty, artistic sight. I'll download the photo of the finished dish tomorrow and share in the recipe section. I may fix it again, but it is something special that I would probably only fix at Christmas. The really neat thing is that it's a very flavorful mix of ingredients. We both really liked the tastes and textures of the finished product. To go with that big salad, I fried double-breaded pieces of cod fish in the air fryer and put together a tomato-based sauce to spread on the fish. The recipe called for red snapper, but I knew I could much more easily find cod fish so I bought a couple pounds of cod. The sauce recipe includes some interesting flavor mixes - olives, jalapeno peppers, garlic, and a mix of sweet spices, combined with Goya brand tomato sauce, which is already nicely spiced when it's canned. The cookbook notes that this olive & jalapeno combination is typical of the cooking style in Veracruz, Mexico's principal seaport. To round out the meal, I combined lemon juice and oregano with extra virgin olive oil - traditional Greek flavorings - to 'perk up' the flavor of frozen green beans, which I cooked in a low sodium vegetable broth to start. I really thought the 3 dishes would go well together and they did. They highlighted each other's flavors; what was supposed to be heated was, and what was supposed to be chilled was exactly that. It was funny - we didn't have any bread with dinner, and no dessert afterwards. Edward helped, and we admitted we were both a little tired afterwards. I loaded up the dishwasher and ran it - almost fit in everything, lol. We'll be cooking again tomorrow, but simpler things. I'm cooking a Mississippi Pot Roast in the crockpot, and we'll either have a boxed mix of scalloped potatoes or I'll whip up mashed potatoes to go with that, along with a box of stove top stuffing and a can of chilled cranberry sauce. The only traditional side dish I'm making from scratch is a sweet potato casserole that includes adding some egg nog. We'll have dinner rolls, but we don't have any dessert planned. Good morning ☀️ May you all have a Blessed Christmas Day! It’s 55 degrees here at 6:15 am.
We returned grands to their rightful parents at DD#2’s annual Christmas gathering of food & goodies. DH & I drove separate to get them all returned with their stuff.
Thankful, as I was leaving the house with granddaughter, there was a packaged delivered with an order I placed back in November! Direct answer to prayer yesterday! I was able to give the items to oldest two granddaughters! I’d been tracking their shipment since November …
DH & I arrived home last night & started a minor cleanup of leftover cookie decorating & other food items around in the kitchen, showered, lights & phones off … yawn exhausted grandparents to bed.
