I couldn't get all of the things that I needed for my usual chili recipe, so I got creative and made up a new recipe for a chili like soup. It turned out pretty good in my opinion, and both my parents seemed to like pretty well it too. 2 lb lean ground beef (browned and drained) 1 64 oz bottle of low sodium V8 juice 3 15 oz cans of light red kidney beans (drained and rinsed) 1 24 oz jar of Tostitos chunky medium salsa Combine all ingredients in large pot and bring to boil. Reduce heat and simmer until beans are tender.
I think that when I make it again, I am going to try adding some brown rice to the recipe next time.

Sounds like a tasty chili, Mel. You should put it in the recipes file. I fixed salmon hash for breakfast, each with a couple of steamed eggs on top. It was pretty good. We'll have that again.

Well, if I could pay my bills with a few sheets of toilet paper, I'd be paid up on this month and still have t.p. left over. I'm watching the last part of The Ten Commandments. It's the season for it. That movie has a real blockbuster cast! Moses asks Pharoah, "Have the days of darkness made you see the light, Ramses?" I hadn't seen it in a long time so I'm enjoying it. Good afternoon, all! Dr. Jeffress' last sermon to wrap up the Courageous series was great. It was all about doing good - not that your works will get you saved, but that you're saved for the purpose of doing good works. He worked Esther's story through a part of the sermon and it was very interesting. I've decided I need to use my planner to simply note 'what I did today' and 'what I cooked today'. I've been seeing jokes on FB where somebody comments they used to have days of the week underwear when they were little, and the person they're talking to comments they'd sure like to have a grown-up set of those now! Edward and I were laughing about that yesterday and agreeing - we're having a tough time keeping up with the days!

It's been a bit of a freak-out and frustrating day, so far. Our buddy, OG Tony, was cleared by his doc last week to return to work. He is a caregiver for a bunch of teen kids at a facility on the edge of downtown. Not exactly sure who funds the place, but I'm sure the kids who live there are better off than wherever they came from. I called him to see if he was back to work on his regular job? And to see how he's feeling. I was going to ask him to mow another place that he's typically mowed for me in the past. No answer; I left a message. Not too much later he called back. He told me the place he works sent him home because he was having trouble breathing. Next thing you know, he was on his way by ambulance to the hospital. I really hope he pulls through this, whether it's C-19 or has something to do with the heart attack he recently had. Ended up calling the tenant who seems pretty straight at present to go mow. He's giving me a great deal - part cash, part taking off some rent - and he'll call me when it's done. Only place I don't have taken care of now is my own yard. I'd have already been out there mowing it myself a week or more ago if we still had a lawnmower, but when I traded my lawnmower to Quay for a mow job last year I laughed and told Edward, "I don't plan to ever own one of those again!" Quay's best friend, who was supposedly taking over Quay's business, has not come through at all. Am I mad? No. I'm disgusted and frustrated. I can't have the tenant mow at our house because I can't trust him not to steal from us. I'm still looking for someone for our house - someone affordable. ...

Good morning! At the very end is this: No telling what many actually died of, or will die of. One of my biggest concerns about this whole business is that when it is all over and more people begin to realize just how badly the "experts" overreacted and how much of the panic was just media fear mongering, that it will cause many people not to take the "experts" seriously in the event that there really would be a true pandemic in the future severe enough to actually justify the ridiculous shutdowns and such that we have seen over this.

I expect you're right. Your comment brings to mind all those memes where someone was kicked back in a chair and smirking with a comment about having survived 10 end-of-the-world threats so they're not worried about anything. It's such incredible shallowness and arrogance that will likely be the end of a person.

It's gloomy & humid this morning ... looks like we might have had a little rain overnight, the grass is so wet. We have rain in the forecast for later today, but not a lot of it. It's supposed to be cloudy all day, with temperatures in the low 70s. Probably will be very humid, lol. Working from home, my co-workers are snuggly & not ready to get up in the mornings.
