Roasted Brussels Sprouts with Lemon, Thyme, and Goat Cheese
Ingredients:
1 pound Brussels sprouts, cut in half 2 tablespoons olive oil 1 tablespoon fresh thyme leaves or sprinkle on dried thyme to suit your tastes Juice of half a lemon - use juice of both halves of the lemon if it suits you ½ teaspoon kosher salt ¼ teaspoon black pepper ¼ teaspoon garlic powder 2 tablespoons chopped walnuts ½ cup crumbled goat cheese
Directions:
1. Preheat oven to 400 degrees. 2. In a large bowl, toss the Brussels sprouts with the olive oil, thyme, lemon, salt, pepper, and garlic powder. 3. Line a baking pan with parchment paper or foil If you use foil, coat with non-stick spray. Roast the Brussels sprouts for about 20-23 minutes, stirring every few minutes to ensure they cook evenly. 4. Remove from oven, sprinkle in the walnuts, then bake for another 7-10 minutes. The Brussels sprouts are done when they’re lightly golden on the outside, and tender inside. 5. Transfer the cooked Brussels sprouts to a bowl, toss with goat cheese, and serve.
Note: Blue Cheese or Feta Cheese work well if you do not have goat cheese.

I picked out a dozen beautiful fresh Brussels sprouts at the store & used them in this recipe. If you use fresh sprouts, be sure to wash them & remove an exterior leaf or two.
Because there was probably not a pound of sprouts, I sprinkled on Mrs. Dash, garlic powder, and dry basil to suit our tastes. Feel free to do the same thing - amounts of seasonings are not set in stone.
Also, we each added the amount of blue cheese that we wanted on our sprouts, vs. my measuring & adding too much or too little to suit individual tastes.
