Sausage-Vegetable-Cheese FrittataIngredients:
1 lb Breakfast Sausage
3 golden potatoes (or 4 red potatoes), sliced thin
2 cups fresh baby spinach
1/2 red, orange, or yellow bell pepper, chopped
1 onion, chopped
8 X-Large Eggs
1/2 cup whole milk
1/4-1/2 cup freshly shredded Parmesan cheese
Salt & Pepper
Shredded Cheddar Cheese or Your Favorite Shredded Cheese
Notes:
Easy recipe to prepare. Best thing to do is to prepare the
vegetables & cheeses before preheating the oven.
This will easily fill a 14" wide and 3"-4" deep skillet. Use something
that will go into the oven. Wrap the handle with foil if needed.
Salsa and/or sour cream are good sauces with the finished product.
Preparation Instructions:
Preheat oven to 375 degrees.
In a large cast iron skillet, or other oven-safe skillet, brown sausage over
medium heat. Add in the onions, bell pepper, and potatoes. Cook veggies several
minutes, but not so long the potatoes are done. Add spinach and cook for 2-4
minutes until wilted.
In a medium bowl, whisk together the eggs, milk, and Parmesan cheese. Add salt &
pepper. Pour egg mixture over the top of the meat and veggies. Bake in oven for
20 minutes. Add the shredded cheese across the top of the frittata and bake
approximately 10 minutes more. Be sure center is cooked through.
Serves 4-6. If you serve 2 & have leftovers, wrap the leftovers in foil and
refrigerate. The leftovers make a great breakfast or lunch.
