2 Tbsp Butter 2 Cloves of Garlic (use 1 tsp is using chopped garlic in the jar) Chop half of a small onion 1/2 cup of heavy cream or almond milk, your choice (I used 1/4 cup of each) 1 cup Cheddar cheese 2 small zucchini, or 1 medium, sliced and then the slices sliced in 1/2
1. In oven proof skillet over medium heat, melt the butter. Then add the garlic and onion and cook until browned and fragrant.
2. Add the almond milk (or cream) and simmer until it starts to boil. Slowly add in 1/2 cup of the shredded cheese and stir until melted.
3. Stir in the sliced zucchini until all are covered with the sauce. Stir and cook for another 5 minutes.
4. Sprinkle remaining 1/2 cup of cheddar cheese on top. Then bake in 400°F oven until top is browned (about 20 minutes).
Note: It's okay to use a heaping half cup to in each case in order to be sure you have enough cheese included (but 3/4 cup in each case would be too much).
