Healthy Cucumber Snack or Side Dish
This recipe is quick and easy. If you're eating Low Carb or following a Keto Diet, this recipe makes a great detox side dish to add to breakfast, lunch, or dinner menus. It is naturally gluten fee, and is also Paleo. This recipe is Whole 30 Compliant, and low calorie too.
Ingredients:
1/2 - 1 Cucumber, sliced thin; halved or quartered if desired
Extra Virgin Olive Oil
Lemon Juice, freshly squeezed
Your favorite spice to dash on - cayenne pepper, basil, oregano, pink Himalayan salt & fresh ground black pepper, or whatever suits your taste
Instructions:
1. Place the cucumber slices (or pieces if you halved or quartered the slices because you used a large cucumber) in a wide, shallow dish or platter with sides.
2. Measure out enough olive oil to barely cover all of the cucumber slices.
3. Cut the lemon in half. Juice one half and add it to the oil & cucumbers. Stir everything together so that it mixes well. Taste to see if there is enough lemon juice mixed in. If you prefer more, juice the other half of the lemon and stir the additional juice into the mix.
4. Put the dish into the refrigerator and allow the cucumbers to marinate in the oil-lemon juice for at least 30 minutes up to 2 hours. Overnight will not be too long.
5. Serve and sprinkle with your desired spice, or with salt & pepper.
This easily serves 2 people. The marinade is delicious if you add it to whatever salad or entree you're eating with this Healthy Cucumber Snack side dish. I've added this to salad that I hadn't put dressing on yet, and I also spooned a little of it over a roasted turkey cutlet.
