Pan-Fried Radishes with Bacon
Goes great in place of potatoes for breakfast! ... Also good side dish at any time of day.
Ingredients:
4 slices bacon, diced 1 ½ pounds radishes, diced 1 small onion, diced 1 teaspoon minced garlic (from a jar) Salt & Pepper to suit your taste 2 teaspoons chopped parsley, if desired
Instructions:
1. Heat a large skillet over medium heat and add the bacon to the pan. Cook, stirring often, until nearly crisp. Remove from the pan & blot up grease.
2. Add the chopped radishes, chopped onions, and garlic to the pan with the bacon grease and continue cooking, stirring often, until radishes are softened, about 15-20 minutes. If there's not enough grease to cook appropriately, add about 1/4 cup unsalted vegetable broth and let it cook down as the radishes cook. 3. Crumble the bacon and return to the pan about halfway through cooking so the radishes absorb some of the direct bacon flavor. Watch closely, stir often, to prevent burning.
4. Sprinkle with salt, pepper, and parsley before serving. Serve hot.

I wonder how that would work with turnips instead of radishes.
I like radishes, but I don't feel well after eating them.

I'll bet that would be good with turnips! We really like turnips so I may try this recipe again with turnips next month. Thanks for the suggestion, Mel!
