Roasted Red Onions - a Mediterranean Dish
Ingredients:
4 Red Onions, sliced into 1/2" rounds
2 Pears, diced
3 oz crumbled Feta Cheese
1/4 cup Pine Nuts
1/4 cup Balsamic Vinegar
Instructions:
1. Preheat oven to 375.
2. Place the onion rounds on a parchment-lined baking sheet.
3. Cook in the preheated oven for about 15 minutes, or until the onions are warmed and softened.
4. Place onions on a serving platter and carefully top them with diced pears, Feta, pine nuts, and a drizzle of Balsamic vinegar.
5. Serve.
