Ingredients:
1 lb. Ground beef 1 Packet of taco seasoning ½ Onion chopped 1 C. Shredded taco blend cheese 4 Tbsp. Sour cream 4 Tbsp. Salsa ¼ C. Green onions chopped 2 Ripe avocados
Directions:
Heat the ground beef and onion in a skillet over medium high heat on the stove. Cook until the meat is completely browned and the onions have softened. Drain any excess fat from the skillet. Sprinkle in the taco seasoning and stir the meat to combine. Cut the avocados in half lengthwise and remove the pit. Scoop out the flesh from the inside of the avocados. Fill the avocado shells with the taco meat and top with shredded cheese, sour cream and salsa. Add green onions for garnish before serving.

Are you supposed to do anything in particular with the avocado flesh? Just wasn't sure if I was missing something. (Trust me, I wouldn't let it go to waste ... We are avocado inhalers at this house! )

We are avocado inhalers at this house! ) It's not used in the recipe, so I suppose that you could save it to use for something else. I don't know much about avocados other than as guacamole used as a dip or condiment.

I like fresh avocados, you can skip putting them in anything for me. I'll eat guacamole if it's part of an order at a restaurant, but here at home, we just cut the fruit in half, take out the seed, peel off the husk, and slice up the flesh. It's super healthy. I eat a half an avocado with breakfast most days of the week, unless we have none on hand, which doesn't happen often. So, yes, we'd eat the avocado meat referenced above.
