Turkey with Lime Butter Sauce
Ingredients:
For the Turkey Cutlets:
1/2 cup all-purpose flour
1/2 tsp Italian seasoning
1/2 tsp paprika
1/2 tsp coarse sea salt
1/2 tsp black pepper
2-3 turkey breast cutlets
2 Tbsp olive oil
Reduced sodium vegetable broth as needed
For the Lime Butter Sauce:
2 green onions, chopped - use the white and as much of the green as is in good shape
1 tsp of jarred minced garlic
1/4 cup of reduced sodium vegetable broth
1/4 cup of lime juice*
1/2 cup butter, sliced or cubed for easy melting
1/2 tsp minced dill, fresh or dry
grated lime peel from 1 lime*
Salt & pepper to taste
Directions:
1. In a large resealable plastic bag, combine the first 5 ingredients. Add a little more pepper if you prefer.
2. Add turkey cutlets, close the bag, and shake to coat the turkey cutlets well.
3. In a large skillet, heat oil over medium heat. Add turkey and cook on each side until turkey is cooked through but still tender and juicy (don't let it dry out).** Add vegetable broth as needed to prevent turkey from over-cooking. Remove the turkey and keep warm.
4. Drain the skillet if there is too much liquid, but do not lose any browned bits. Cook green onion & the garlic for 1 minute. Add broth and lime juice, stirring while bringing to a boil. Reduce heat to low and stir in remaining ingredients. Heat & stir until butter has melted.
5. Return turkey cutlets to the skillet and spoon some of the lime butter sauce on top of the cutlets. When it's warmed up together for about 5 minutes, serve.
* We grated the peel from one lime and then cut the lime in half & juiced it. It was not enough to equal 1/4 cup so we used bottled concentrated lime juice to make up the difference.
** I cut the turkey cutlets in half as they cooked to judge 'how done' they were.
