Beef Stir-Fry - Quick and Tasty
Ingredients:
1 pkg Kikkoman Stir-Fry Seasoning Mix
1/4 cup water
3/4 to 1-lb thinly sliced beef cut in strips for stir-fry
2 Tbsp olive oil + 1 Tbsp and a couple tablespoons of unsalted broth (vegetable or beef)
1-2 handfuls of matchstick carrots
1 stalk of celery thinly sliced; cut the slices in half if they're very large - treat them like a condiment
1/4-1/2 bell pepper (green, yellow, orange, or red)
1/2 onion largely chopped
4-oz can of mushroom stems & pieces
Approx 1/2 can of pineapple chunks in 100% juice
Approx 1/4 cup of juice from the pineapple chunks
Directions:
1. Dissolve the seasoning mix in 1/4 cup of water and set aside.
2. Stir-fry the thinly sliced beef strips in hot oil in a large, non-stick skillet for approx 5-7 minutes. Remove the strips and wipe out the skillet. Skillet doesn't have to be dry or totally free of oil or beef bits, just somewhat.
3. Add 1 Tbsp of oil to the skillet, along with the next 4 ingredients. Cook on medium for about 5 minutes, adding a couple of Tbsp of broth as needed. Add the mushrooms and cook to heat through and mix the flavors with the already cooked vegetables. Add the pineapple chunks and continue cooking, stirring in the pineapple to mix the flavors.
4. Add the 1/4-1/2 cup of pineapple juice to the mixed Kikkoman-water sauce. Stir.
5. Add the beef strips back to the skillet. Stir well and heat for 2-3 minutes.
6. Pour in the seasoning-pineapple juice mixture. Cook and stir until the sauce boils & thickens slightly.
Serve & enjoy!
