Potato and Black Bean Breakfast Hash
Ingredients:
1 tablespoon vegetable oil 1 Russet potato, chopped into ½-inch cubes 1 yellow onion, chopped ½ cup spicy salsa ¼ to ½ cup water 2 cups canned black beans, drained and rinsed ½ teaspoon salt
Instructions:
1. In a nonstick frying pan over medium heat, warm oil. Once hot, add potatoes and onions and sauté for 5 minutes, or until beginning to brown.
2. Add salsa and ¼ cup water, then cover. Continue to cook about 5 minutes, until potatoes are fork-tender. Add up to ¼ cup more water if potatoes start to dry out too much.
3. Add beans and heat through for 5 minutes. Stir in salt. Remove from heat.
4. Serve hash with your choice of: sour cream, a large dollop of mashed avocados, queso, and/or chopped fresh cilantro.

Changes I made:
I used dehydrated/freeze-dried diced potatoes. They rehydrate to approximately double their size. 1 cup dry potatoes will produce 2 cups rehydrated.
1 15-oz can of black beans, rinsed & drained, equaled 1-1/2 cups. That was enough, although 2 cups would have been better (I didn't want to open another can).
I also added 4-oz of chopped cremini mushrooms.
1/2-cup salsa was not enough, so I used 1-cup and omitted the water.
This is a tasty hash, but needs something to spice it up. Next time, I'll probably add some chopped jalapeno, or at least a 4-oz can of green chilis.
