Green Chili Turkey Enchiladas
A very easy dish with many ingredients you may already have on-hand.
Ingredients:
2 cups turkey tenderloin, bakes & shredded 2 cups Colby jack cheese, shredded & divided 4.5-oz can chopped green chilis 6 flour tortillas 19-oz Las Palmas green chili enchilada sauce 1 cup sour cream salt & pepper to taste
Instructions:
1. In a small bowl, combine turkey, 1 cup cheese, green chilis, salt and pepper.
2. Spray a "X" baking dish, with butter or olive oil cooking spray to ensure the tortillas do not stick.
3. Spoon 1/3 cup of the turkey-cheese-chili mixture down the middle of a tortilla. Top with a line of sour cream (the squirt tube version is easiest to use, but I used a simple dinner spoon & that wasn't hard). I added a sprinkle of Weber Kickin' Chicken spice to add a little more flavor/heat.
4. Roll the tortilla and place seam-side down in the baking dish.
5. Repeat with remaining tortillas. Pour the enchilada sauce over the top of each enchilada, using a knife or fork to separate them enough that the sauce also runs in the pan. Sprinkle on the remaining 1-cup of cheese.
6. Bake 20 minutes at 350-degrees F.
Easily makes 6 nice-sized enchiladas. We served them with black beans and a half-avocado each. One enchilada each was enough for a meal, so there were leftovers for another meal.
