Herring SaladNote: This dish could also be served as an appetizer. Whatever course it appears in, herring salad serves well on thinly-sliced rye bread.
Ingredients:
12 ounce jar pickled herring and onions, drained and cut into 1/2 inch dice
1/4-cup chopped (1/4 inch dice) dill pickle chips
1 medium size yellow potato boiled, peeled, cooled and cut into 1/2 inch dice
... Note: Boil the Potato till it's tender, but not mushy. 15-17 minutes is about right for a potato the size of a woman's closed fist. ...
1 crisp Red Delicious apple, unpeeled, cut into 1/2 inch dice
1/4 cup chopped onion
1/4 chopped pecans
1/4 cup plain Greek yogurt + 2 to 3 tablespoons of Mayonnaise mixed in
... Note: Can use a scant 1/2-cup of Sour Cream in place of yogurt/mayo mix, if desired. ...
1 teaspoon spicy brown mustard
Kosher salt to taste
Ground black pepper to taste
Directions:
Combine the herring, pickles, potato, apple, onion, and pecans in a 2 quart serving bowl.
Combine the plain Greek yogurt/mayo mix, spicy brown mustard, salt and pepper in a small bowl and whisk to blend. Pour the dressing over the salad, and gently mix. Refrigerate until you are ready to serve it.

Made this last evening. Used the 1/2 cup of Sour Cream, with 1-1/2 to nearly-2 teaspoons of spicy brown mustard. Also, used a can of diced white potatoes, instead of boiling and dicing a potato myself. I think it turned out better this way!
