Bleu Cheese Pecan Green Beans
12 oz fresh green beans, trimmed
1/2 cup pecan halves
2 tablespoons butter (do not use margarine)
3 oz bleu cheese, crumbled (3/4 cup)
1 In 2-quart saucepan, place beans in 1 inch water. Heat to boiling; reduce heat. Simmer uncovered 8 to 10 minutes or until beans are crisp-tender; drain. Place in serving bowl; cover to keep warm.
Ingredients:

Steps:
1 In 2-quart saucepan, place beans in 1 inch water. Heat to boiling; reduce heat. Simmer uncovered 8 to 10 minutes or until beans are crisp-tender; drain. Place in serving bowl; cover to keep warm.
2 Meanwhile, in 1-quart saucepan, cook pecans over medium heat 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until nuts are golden brown and toasted. Place in small bowl; reserve.
3 In same 1-quart saucepan, melt butter over low heat. Heat, stirring constantly about 6 minutes or until butter is golden brown. (Once the butter begins to brown, it browns very quickly and can bum, so use low heat and watch carefully.) Immediately remove from heat. Pour over beans; toss to coat. Sprinkle with bleu cheese and reserved pecans.
How I Made It:
1. I used a 12 oz frozen bag of Sugar Snap Peas. I steamed them in the bag in the microwave for 2-1/2 minutes.
2. Meanwhile, I broke enough pecan halves in pieces (snapped them between my fingers) till I had nearly 1/2 cup.
3. I crumbled enough bleu cheese to equal 1/2 cup.
4. Lastly, I melted 2 Tbsp of butter in a 1-qt saucepan and poured it over the sugar snap peas in a bowl. I then melted a 1/2 Tbsp of butter in the 1-qt saucepan and stirred the pecan pieces around in it, then pouring the pecans over the sugar snap peas. The bowl of sugar snap peas had cooled off, so I popped it back into the microwave and heated it for 30 seconds. After that, we helped ourselves to the sugar snap peas and dished out the amount of crumbled bleu cheese from the cute container we'd put it in.
This is a delicious combination of flavors!
