Ingredients:
2 pound pork butt or other part 1/2 onion chopped 2/3/s jalapeno, seeded, chopped 1 1/4 tsp salt and 1/2 tsp pepper Little bit of dried garlic Juice from one or two orange(s) Rub: 1/2 TBSP dried oregano, 1/3 tsp cumin, a bit of oil Rinse and Dry pork. Rub in salt and pepper. Mix rub and rub in. Place pork in slow cooker. Top with onion, jalapeno, garlic, orange juice and cook for 8 to 10 hours on low. Pork should be fat side up. Remove juice to a separate pot. Pull pork apart, remove fat globs, and cook down juice a bit after removing fat. Heat a wee bit of oil in a fry pan on high heat. Dump in pork and poor juice over it. Let juices evaporate. When bottom side of pork is golden brown and crusty, remove from heat. Cover meat with any remaining juices. Over medium heat place 2 white corn tortillas sandwiched together (street size, preferably) dipped in water in a fry pan. Heat on each side for about 30 seconds, then collect in a warmer. Serve topped with pico de gallo, green onions, lime juice, and a wedge of lime on the plate, and extra cilantro.
