Jalapeno-Spinach Casserole
Ingredients:
1 - 10 oz package of frozen chopped spinach
1 - 10.5 to 10.75 can of cream soup (celery, broccoli, cheddar cheese, mushroom, or whatever you have on hand will probably work)
1 egg, beaten
1 cup Cheddar cheese, shredded (whatever you have on hand will probably work)
1 large Tbsp of chopped jalapeno pepper
3 slices of bread, toasted and cubed
shredded Mozzarella cheese, or other shredded white cheese (Parmesan, Romano, Asiago, whatever you have on hand)
3-4 slices of jalapeno to garnish top of the casserole
Directions:
1. Set oven to 350 degrees F. Spray a 1-1/2 quart Pyrex casserole dish with olive oil or butter spray.
2. spinach according to package directions. Drain thoroughly, mashing out all of the liquid.
3. Combine spinach, soup, egg, and Cheddar cheese. Add the toasted, cubed bread and mix in.
4. Pour into a greased 1-1/2 quart Pyrex casserole dish.
5. Bake at 350 degrees for 1 hour. Check the dish to be sure it's not 'too wet' inside. Bake 10-15 minutes longer if needed.
6. Add a light coat of shredded Mozzarella or other shredded white cheese to the top of the casserole. Arrange sliced jalapeno on top as a garnish. Lightly cover with a paper towel and cheese will probably melt, or set in the still-warm oven to ensure it melts.
7. Serve warm, or at room temperature.
