Sauteed Brussels Sprouts and Fresh Apple SaladIngredients: 10-oz bag of Steamable Frozen Brussels Sprouts Half of a thinly-sliced white or yellow onion 1 Granny Smith Apple - cut in 1/4th's, cored, and further cut in large chunks
(can use 2 apples, is desired) 1-2 Tbsp Olive Oil 1-2 Tbsp Coconut Oil Your Favorite Salad Greens, as desired Sliced or Slivered Roasted Almonds; Chopped Pecans; Chopped Walnuts, as desired Raisins, as desired
Directions: Steam the Brussels sprouts in the bag, per microwave directions Remove Brussels sprouts from the bag & allow them to cool Cut the cooled Brussels sprouts in half. Add 1-2 Tbsp olive oil to a skillet and saute the Brussels sprouts and onion. Be sure to allow the sprouts to saute cut-side down so they brown a little. Stir the sprouts and onions pieces often so they are cooked through. Put these vegetables into an oven safe dish and set in the oven at 200 degrees, just enough to keep them warm. Add the coconut oil to the skillet; when it's warm, add the apple chunks and saute them until they're warm to your satisfaction. Remove the dish of Brussels sprouts and onions from the oven and stir in the apple chunks. If desired, you can add some nuts and/or raisins.
You can serve & eat this as a side dish, or spoon the mix onto your favorite salad greens with some salad dressing. (Those are whole almonds in the photo - someone else's photo, and she didn't know much about nuts, so she used whole almonds.)
