Brussels Sprouts au Gratin
Quick & easy!
Ingredients:
1 Tbsp Olive Oil
1 medium Onion, chopped to suit yourself
2 slices Bacon, chopped
1-1/2 lbs Brussels Sprouts, trimmed & halved
1/4 teaspoon Salt
1 cup shredded Sharp Cheddar Cheese, 4 oz
16 buttery crackers, such as Ritz crushed, approx 1 cup
Directions:
1. In 12" nonstick skillet, heat oil over medium heat. Add onion and bacon; cook, stirring, until browned, about 10 minutes.
2. Add sprouts and salt; cook until softened, about 10 minutes.
3. Add 3/4 cup water; bring to a boil. Cover; reduce heat to medium-low, and cook until the sprouts are tender, 12-15 minutes. Drain.
4. Heat oven to 400 degrees F. Coat 1-1/2 qt baking dish with cooking spray.
5. Transfer sprouts mixture to the baking dish. Sprinkle cheese and crackers over top.
6. Bake until cheese melts, 8-10 minutes.
Serves 6.
