Mushroom Stew – A Quick VersionIngredients:3-4 Tbsp olive oil for cooking Chopped onion to suit your tastes 2 cloves of garlic, finely chopped (use 1 tsp chopped garlic in a jar) 8 oz sliced white mushrooms 8 oz sliced baby portabella mushrooms 1 can of sliced potatoes, drained 1 can of Great Northern Beans or Large Butter Beans, drained & rinsed
¼-1/2 cup vegetable broth, if needed* A sprinkle of Italian seasoning or Mrs. Dash A sprinkle of freshly ground black pepper Instructions:1. Saute the garlic and onions in the olive oil for cooking. 2. Add in the mushrooms and cook for 5-10 minutes. 3. Add the potatoes and beans and a sprinkle of Italian seasoning and black pepper. Stir until hot. *If the pan begins to go dry at any point, add a small amount of vegetable broth.
