Ingredients 1 pound lean ground beef 1/2 cup chopped onion 1/3 cup sliced celery 1/2 teaspoon salt 1/4 teaspoon pepper 1 can (10-3/4 ounces) condensed cream of celery soup, undiluted 1 package (16 ounces) frozen Tater Tots 1 cup shredded cheddar cheese
Directions
In a large skillet, cook the beef, onion and celery until the meat is no longer pink and the vegetables are tender; drain. Stir in salt and pepper.
Spoon mixture into a greased 3-qt. baking dish.
Spread with soup.
Top with frozen Tater Tots.
Bake at 400° for 40 minutes or until bubbly.
Sprinkle with cheese.
Bake for 5 minutes or until cheese is melted.

We like carrots a lot, so I added a handful of matchstick carrots - about an equal amount to the chopped celery and chopped onion - and sauteed them together.
I cooked up the pound of ground beef first, and seasoned it with Mrs. Dash Garlic & Herb seasoning.
Next I sauteed the vegetables in the same skillet, adding a little low-sodium vegetable broth to keep it from getting too dry and seasoning with more garlic & herb seasoning.
Mix the ground beef and vegetables together in the 3-qt casserole dish. Stir in the undiluted celery soup; add the potatoes and bake.
Add the cheese and return to the oven till it melts.
We served it with salsa & sour cream.
