Honeyed 3-Bean & Onion Salad
Ingredients:
The Heart of It:
1 15-oz can of cut green beans, drained & rinsed 1 15-oz can of yellow wax beans, drained & rinsed 1 15-oz can of kidney beans, drained & rinsed 1 small-to-medium white onion, sliced into thin rings
Dressing:
1/4-cup extra virgin olive oil 1/8-cup white vinegar 1/8-cup cool water 1-Tbsp honey 1/4-tsp ground dry mustard 1/4-tsp garlic powder 1/4-tsp onion powder 1/4-tsp ground black pepper
Directions:
1. In a large bowl, gently mix the green beans, kidney beans, wax beans, and sliced onions.
2. In a separate bowl, mix in this order! – the olive oil, honey, mustard, garlic powder, onion powder, and black pepper. When that’s mixed up, begin adding the white vinegar in small amounts, mixing well after each addition. Taste the dressing and add enough white vinegar to meet your family’s taste preferences. For us, that’s about ½ of a ¼ cup. Add enough cool water to account for the remainder of the ¼. You need enough liquid to mix up with the amount of beans and onion slices.
3. Pour the well mixed dressing over the beans and onions and gently mix until everything is coated with dressing. Cover and chill at least 2 hours.
