Zucchini and Potato BakeVery easy dish to make; fun to eat - a summer comfort food! Ingredients:2 medium zucchini, quartered and cut into large pieces (use your own judgment; I cut the chunks into approx 1" - 1-1/2" lengths) 3-4 medium potatoes, peeled and cut into chunks 1 medium red bell pepper, seeded, sliced vertically and slices cut into approx 1" pieces 1/2 cup dry bread crumbs (Panko works great!) 1/4 cup olive oil salt & pepper, garlic powder & a pinch of paprika, to taste dried dill Directions:Preheat the oven to 400 degrees. 1. In a large bowl, toss together the chunks of zucchini, potatoes, and red bell pepper as you cut them. Add the 1/2 cup of bread crumbs and the olive oil. Mix the oil, bread crumbs, and vegetables with your hands until the vegetables are well coated. 2. Use a medium to large baking pan, depending on the amount of vegetables you have. Spray the pan with an oil spray like Pam Olive Oil. Pour the vegetable mixture into the baking pan. Sprinkle with ground salt and ground pepper. Sprinkle on the dill to suit yourself. 3. Bake 1 hour in the pre-heated 400-degrees oven, stirring occasionally, until potatoes are tender and lightly browned.
