Crustless Spinach QuicheIngredients:1 cup chopped onion 1 cup sliced fresh mushrooms 1 tablespoon vegetable oil 1 package (10 ounces) frozen chopped spinach, thawed and well drained Note: Microwave steamable frozen spinach works well Meat is optional, but if you want to include meat you can add: 1-cup sauteed finely ground breakfast pork sausage ~ or ~ 1-cup sauteed finely ground breakfast turkey sausage ~ or ~ 1-cup finely chopped cooked ham 5 large eggs 3 cups shredded Muenster or Monterey Jack cheese up to 1/2 Tbsp Italian seasoning, such as Mrs. Dash Italian seasoning Directions: 1. In a large skillet, saute onion and mushrooms in oil until tender. Add the spinach and mix into the onions and mushrooms. 2. If you are using sausage or ham, add it next and mix in. 3. Cook and stir until the excess moisture is gone. 4. Beat eggs; add cheese and mix well. Stir in spinach mixture and pepper; blend well. 5. Spread the mixture evenly into a greased 9" pie pan. 6. Bake at 350 degrees for 40-45 minutes, or until a knife inserted in center comes out clean. 7. Cool and slice into 8 sections (like pie pieces).
