Steamed Cabbage With Smoked Sausage & Red Potatoes
This is a great dish served on New Year's Day, or any cold, blustery, rainy, snowy type of day. It can be served as a main dish or as a side dish.
Ingredients:
2 Tbsp butter 1 large onion, chopped 1/2 c water, or low-sodium broth 1 small-to-medium head of cabbage, cut into wedges 4-6 red potatoes, cut into cubes 1 lb smoked sausage, sliced - beef, pork, or turkey will work; I use uncured turkey 1 tsp salt* 1/2 tsp pepper*
*Note: I use Herbs de Provence, sprinkled lightly over the meat & potatoes before adding the cabbage
Directions:
1. Melt butter in dutch oven; add onions and saute until tender. 2. Pour 1/2 cup water into the pot. 3. Add sausage slices and potato cubes. 4. Then add cabbage wedges. Separate each wedge into 2 or 3 sections; be sure to cover all the pot ingredients. 5. Add salt & pepper, or other spices. 6. Cover and steam for 30 min. or until tender. 7. Stir occasionally. - I stir it up every 10-15 minutes. 8. Add 1/4 to 1/2 cup water if needed to keep from burning.*
*Note: I used 1-cup low-sodium vegetable total before it was all cooked, adding 1/4-cup at a time; don't let the potatoes stick.
