Baked Turkey Cutlets with Sour Cream Sauce
Just 6 ingredients!
Serves 4.
Ingredients:
1 pound Turkey Breast Cutlets 8 ounces sliced mushrooms (fresh or jarred) 2 packets dry instant onion soup mix (1 ounce each) 1-1/2 cups heavy whipping cream 8 ounces low-fat sour cream 3 cups cooked rice (or noodles)
Directions:
Step 1. Place breast cutlets on bottom of large 13 x 9-inch baking dish and cover with mushrooms.
Step 2. Mix remaining ingredients in a medium bowl until smooth.
Step 3. Pour sauce over turkey and mushrooms. Step 4. Bake at 350°F, uncovered, for 35 minutes (do not open oven door).
Step 5. Remove turkey to a serving platter, reserving sauce. Slice cutlets into strips.
Step 6. Serve sliced turkey on a bed of rice or noodles.
Step 7. Spoon sauce over the turkey breast strips & rice or noodles.

This is one of those recipes that gets better after setting in the refrigerator for a day. ;)

Slicing a small-to-medium zucchini, or two, to add to this dish works well.
I cut the slices in half and rimmed the turkey cutlets with zucchini. It was pretty and baked up real well. Added a little extra flavor.
