Baked Parmesan Turkey CutletsIngredients: 1 pound turkey breast cutlets Kosher salt Freshly ground pepper 1/2 cup all-purpose flour 1 cup Panko bread crumbs 2/3 cup Parmesan cheese (grated) 1 teaspoon dried basil 1 to 1-1/2 tablespoons of spicy brown mustard 1 tablespoon milk, or two
2 large eggs
Garnish: Fresh parsley Steps to Make It: 1. Set oven to preheat at 375 degrees; grease a 9X13X2 pan and set aside.
2. Assemble all ingredients -
Put the flour in a wide, shallow bowl and set aside. Mix the eggs, mustard, and milk and poor into a wide, shallow bowl and set aside. Mix the bread crumbs and grated Parmesan in a wide, shallow bowl or 9" baking pan. 3. Put it all together - Sprinkle both sides of the cutlets with salt and pepper. Dredge each cutlet in the flour so both sides are lightly covered. Next dip each cutlet in the egg mixture on both sides. Place each cutlet in the bread crumbs-cheese mix and make sure each side is well coated. Arrange the cutlets in the baking pan. 4. Bake approx 25-30 minutes, but watch carefully so the cutlets do not bake so long they dry out. 5. Garnish with fresh parsley and serve.
