Quick Smoked Sausage Dinner
Ingredients:
2 tablespoons olive oil or butter
1 package Smoked Sausage, sliced on an angle with rounds cut in half (I used Hillshire Farms Uncured Polska Kielbasa)
1/2 of a small onion, sliced lengthwise and then slices cut in half
1/2 red, yellow, or orange bell pepper, seeded and cut into ½” strips, then cut the strips in half
1 zucchini, 6"-8" long, sliced into rounds, then rounds cut in half or quarters (depending on size & your preference)
1 Granny Smith apple, cored and sliced lengthwise with each slice cut into 4 small bites
1/2-3/4 cup low sodium vegetable broth
Mrs. Dash Italian mix seasoning
Cinnamon
Directions:
1. Heat the oil or butter in a large skillet till hot, but not smoking. Add the chopped onion, the colorful bell pepper strips, and the sliced sausage pieces. Cook for a few minutes, stirring occasionally, to brown the sausage pieces on both sides and soften the onions and bell pepper strips.
2. Add the halved zucchini slices and the chopped apple to the skillet. Stir well. After a couple of minutes, add in the broth and continue to stir occasionally.
3. When the zucchini and apple are almost as soft as you prefer, and a little broth is left in the skillet, sprinkle Mrs. Dash Italian Seasoning mix over the meat, veggies, and fruit. Stir well. Sprinkle cinnamon lightly across the food in the skillet and stir it in. Continue to cook until the broth has been absorbed or evaporated and the zucchini is done to your liking.
We heated some dinner rolls in the oven to go with this and called it enough dinner for the two of us.
