Beef Stew for Two, in the CrockpotIngredients: 1/4-cup All Purpose Flour 1/2-tsp Kosher Salt 1/2-tsp Ground Black Pepper 1 Small Onion, chopped 1/2-tsp Garlic Powder 1 lb Beef Stew Meat 1 can sliced White Potatoes 10-oz bag of frozen cubed Sweet Potatoes, thawed 1-1/2 cups Beef Broth or Vegetable Broth 1/2-tsp Worcestershire Sauce
Directions:
Mix flour, kosher salt, black pepper, onion powder, garlic powder, and stew meat together in a large plastic bag. Place coated meat into a small slow cooker.
Top meat with onion.
Mix together beef broth and worcestershire sauce, and pour over the beef and onion. Stir.
Cook on Low for 3 hours. Add sliced potatoes and cubed sweet potatoes at the 3 hour point. Stir.
Cook on Low for 3 additional hours. Stew meat should be "melt in your mouth" done, but not "cooked to death".
Stir and serve in soup bowls with your favorite crusty bread. *Note: If you cannot eat sweet potatoes - or you simply don't have any on-hand - cubes of butternut squash work well.
