Greek Yogurt Oat Muffins
Basic Recipe
1 c. flour (120 g.)
1 c. oats (80 g.)
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 c. Greek yogurt (225 g.)
1/4 c. honey (3oz)
Additional Ingredients
2-3 tsp. spice (optional)
1/2 c. to 3/4 c. dried fruit, nuts, coconut, chocolate chips, etc. (optional)
1 tsp. flavored extract OR 1 tbs. zest
1 c. shredded or pureed fruit or vegetable
Preheat oven to 350F. Grease 12-cup muffin pan or line with paper cups. In a medium bowl, whisk together the flour, oats, baking powder, baking soda, salt and spice. Mix in dried fruit, nuts, coconut or chocolate chips, if desired and set aside. In a large bowl whisk together the Greek yogurt, honey, sugar, eggs, extract(s) and/or zest. Fold in shredded or pureed fruit or vegetable, then fold in dry ingredients until just moistened. Divide batter among muffin cups and bake 350F for about 20 minutes.

Apple - 1 c. shredded apple or applesauce, 1 additional tsp. vanilla extract, 3 tsp. apple pie spice or cinnamon, 1/2 c. currants or raisins
Banana - 1 c. pureed banana (200 g.), 1 additional tsp. vanilla extract, 3 tsp. cinnamon, 1/2 c. chopped pecans, 1/4 c. mini chocolate chips
Blueberry - 1 c. fresh or frozen blueberries, 1 tsp. lemon extract OR 1 tbs. lemon zest
Carrot - 1 c. grated carrots, 1 additional tsp. vanilla extract, 3 tsp. cinnamon, 1/2 c. chopped pecans, 1/4 c. currants or raisins
