Cube Steaks with Golden Mushroom Gravy
This is quick and easy comfort food, good for weeknight dinners when you haven't much time to cook or Sunday dinners after church.
Serves 3-4
Ingredients:
1-1/4 lb of Beef Cube Steaks 1 can Campbell's Golden Mushroom Soup Sliced white or yellow onion, to put on top of the steaks (so slice an amount that suits your tastes) Salt & Pepper 1/4 - 1/2 cup beef broth or low sodium vegetable broth a few chopped mushrooms, optional
Directions:
1. Preheat oven to 350 degrees.
2. Salt & Pepper both sides of the cube steaks. Place cube steaks flat in the bottom of 10 inch square covered baking dish. Arrange the onion slices across the top of the steaks, covering to suit your own tastes.
3. In a medium bowl, mix the Golden Mushroom Soup with the broth to thin it out a little. Add chopped mushrooms if using them.
4. Pour soup mixture over the steaks to cover. Lift the steaks to allow the thinned soup/broth mixture to flow under them.
5. Place the cover on the baking dish and bake at 350 degrees F for 45 minutes to one hour. Cut into a steak to see if it's getting done at approximately 40 minutes.
6. When the steaks are cooked through, remove the baking dish from the oven and remove the cover so food can begin to cool. Baking dish and cover are both very hot, and the sauce mixture inside will be boiling and will continue to boil for a short period of time.
This dish is excellent when paired with mashed potatoes and green beans.

Some comments at original recipe site suggested using 2 cans of Golden Mushroom Soup and thinning as desired with broth.
If I had larger steaks, or more than 2, I would probably use 2 cans of soup and still thin it. The soup is simply too thick to use by itself (my opinion).
