Chunky Chicken Salad with Grapes and Pecans
A couple of shortcuts to make this come together quickly: 1. Start with a rotisserie chicken. 2. Buy chopped pecans, or pecan pieces, instead of whole pecans or pecan halves
Ingredients:
1/2 cup mayonnaise 2 tablespoons sour cream 1 tablespoon lemon juice 1/8 teaspoon salt 1/8 teaspoon pepper
4 cups of shredded cooked chicken 1-1/4 cups seedless red grapes, halved 1/2 cup chopped pecans 1/2 cup chopped celery
Romaine leaves
Directions:
1. In a large bowl, combine the first five ingredients.
2. Add the chicken, grapes, pecans, celery.
3. Mix lightly to coat.
4. Chill for 30 minutes to 2 hours, then serve on Romaine lettuce leaves.

And, of course, you can bake and shred a package of turkey tenderloins in place of the cooked chicken.
I use turkey because Sweetie is allergic to chicken.
