Marinated Cheese & OlivesThis is Low Carb and Keto-Friendly Yield: 6 servings Prep Time: 5 minutes Additional Time: 2 hours Ingredients: 6 ounces sharp cheddar cheese, cubed 3 ounces Havarti cheese, cubed 1 bell pepper, sliced 1/4 cup black olives 1/4 cup pimento stuffed green olives 1 tablespoon olive oil 1 tablespoon white distilled vinegar 1/2 teaspoon dried Italian herbs Note: Whatever cheese you like, you can use: Gruyere, mild cheddar, etc. You could use some sliced red bell peppers too; maybe cube some pepperoni or summer sausage. This is a fun, easy recipe that looks appealing.
Instructions: 1. Add all of the ingredients to a mixing bowl and stir well to coat. 2. Cover and refrigerate for 2 hours. Let set at room temperature for 15 minutes before serving. Note: You can serve this in the bowl you mixed it up in, or spear an olive & cube of cheese on a toothpick. It's not required to refrigerate this before serving - you can eat it as soon as you make it, but it will have more flavor if it's refrigerated for a couple of hours.

This looks really good. Except I think that I would skip the green olives and double up on the black ones or maybe some small mushrooms.

The mushrooms sound great! Sweetie doesn't care for black olives, so substituting in some small mushrooms would probably please him more than the original recipe. I looked at a small jar of Green Giant whole mushrooms at the grocery store today, and those would work well. I'll probably make this again for the start of college football season, along with some sandwiches.

Little cocktail onions would work well in this recipe too. I found a small jar of those at the store yesterday. They were also reasonably priced.
