Sausage Kale Soup with Mushrooms
Ingredients:
1 32-oz carton of Low Sodium Vegetable Broth 2 cups of Water 1 ring of Sausage, Turkey or Beef, and Uncured if possible (that way, no worry of nitrites or nitrates) 6-7 ounces of fresh Kale, cut or torn in bite-sized pieces 6-7 ounces of fresh Mushrooms, preferably cremini but white mushrooms are okay too 1 tsp chopped garlic, from a jar Mrs. Dash, or at least some fresh ground pepper
Instructions:
1. Put Vegetable Broth and Water in a large soup pot. 2. Bring to a boil over medium heat. 3. Slice the sausage and the mushrooms. Add to the soup pot. 4. Add the kale and garlic to the soup pot. Season with Mrs. Dash or fresh ground black pepper 5. Simmer covered over low heat for approximately one hour
If you'd like, when you ladle the soup into bowls, you can add a slice of Provolone cheese on top, or sprinkle with shredded Mozzarella cheese.

Made a pot of this soup for dinner this evening. I wasn't really in the mood for kale or spinach in my soup. Instead, I added a handful of matchstick carrots. I think it made for a better consistency to the soup.
