Crockpot Collard Greens with Turkey ThighsCollard greens are a Southern favorite ~ a true Southern classic! ~ regardless how they're prepared, but this recipe is the easiest way you'll ever find to cook them. Ingredients:2 Turkey Thighs - thawed, if frozen; or fresh-bought from your grocer's freezer case 3 cups of low sodium Vegetable Broth 2 cups of chopped, freshly washed collard greens, or 2 14-oz bags of frozen collard greens, thawed 1/2 medium white or yellow onion, chopped 2 tablespoons light brown sugar substitute or brown sugar substitute - Swerve 1 tablespoons apple cider vinegar 1 teaspoons kosher salt 1 teaspoon crushed red pepper 1/2-1 teaspoon black pepper, depending on your preferences Directions:Step 1 Combine all ingredients in a 6-quart oval slow cooker. Cover and cook on LOW 9 hours. Step 2 Carefully remove turkey thighs and all bits of bone from the greens after cooking. Step 3 Cool turkey thighs, and thoroughly remove all fat and bone; return turkey meat to slow cooker. Step 4 Stir into greens, and serve.
