Dijon Salmon Fillets
Ingredients:
1 pounds wild salmon, cut into 4 portions
1-2 tablespoons extra-virgin olive oil
1/2-1 teaspoon minced garlic in a jar
2 tablespoons mayonnaise
2 teaspoons whole-grain mustard
1/4 teaspoon ground black pepper
Instructions:
Step 1 Preheat oven to 425 degrees F. Line a rimmed baking sheet with foil. Spray the foil lightly with a cooking oil spray.
Step 2 Combine the garlic with the mayonnaise, mustard, and 1/4 teaspoon pepper. Spread the mixture on top of the fish.
Step 3 Roast the salmon until it flakes easily with a fork in the thickest part, 6 to 8 minutes per inch of thickness.
Serve with a side of your choice. This salmon pairs well with green beans and a rice pilaf.
