Low-Carb Million Dollar Chicken Casserole

This is a crustless chicken quiche that is great for lunch or dinner!
Once you put it together, this casserole can be popped in the fridge overnight; or frozen up to a month baked or unbaked.
Ingredients:
2½ cup chopped cooked chicken
4 eggs
1 cup sour cream
4 -oz cream cheese
1 cup small curd cottage cheese
½ tsp garlic salt or to taste
¼ tsp onion powder
¼ tsp white pepper or to taste
1 cup grated mozzarella cheese
Instructions:
1. Preheat the oven to 325ºF. Spray an 9×9-inch baking dish with cooking spray.
2. Place cooked chicken in the bottom of the prepared dish. Top with cheese.
3. In the bowl of a food processor, combine the eggs, cream cheese, sour cream, cottage cheese, garlic salt, onion powder, and pepper. Blend in the food processor until the mixture is smooth.
4. Pour the egg mixture over the chicken and cheese.
5. Bake until set, about 50 to 60 minutes.
6. Allow quiche to cool for 5 to 10 minutes before cutting.
Notes:
Nutritional Information: 286 calories • 17g fat • 3g carbs • 29g protein• per serving
1. Rotisserie chicken works great for the chicken in this recipe.
2. You can add cooked mushrooms, peppers, or well-drained frozen spinach to the casserole.
3. You can use any cheese that you prefer. I used mozzarella but cheddar, parmesan, or gouda would be delicious.
4. To bake the casserole after freezing, thaw completely and bake as directed.
5. To reheat after freezing, thaw completely and reheat in the microwave or covered in the oven at 350º for 35 to 45 minutes, until warm.
