One-Pan Pasta with Smoked Sausage, Mushrooms, & Spinach
By cooking the entire recipe in one pan — including the noodles — the pasta starch thickens the cooking liquid, making a thick, rich sauce without butter or cream. Be sure to use a large, high-sided skillet so you can easily simmer and stir the pasta.
This is a versatile recipe that easily accommodates your ingredients on hand. This calls for a ring of smoked sausage, but a ring of kielbasa or a package of hot links will also work.
Spinach - fresh or frozen, or fresh kale, or other greens will also work in this recipe.
Ingredients:
2 Tablespoons Olive Oil
3-5 baby carrots, cut into matchstick pieces
1 medium white onion, thinly sliced. Cut the slices in half, or to a size preferred
8 ounces cremini mushrooms, sliced - white mushrooms also work
Italian seasoning to sprinkle on as the dish cooks
10-12 ounces fully cooked smoked sausage cut into 1/4" thick slices. Cut the slices in half if preferred
2 cups unsalted vegetable broth
5 ounces of uncooked penne pasta (mostaccioli, bow-tie, any of the thicker pasta shapes but not spaghetti or angel hair pasta)
1 10-ounce bag of frozen spinach, steamable type
Directions:
1. Heat oil in a large, high-sided skillet over medium heat. Add the onions, mushrooms, and carrots, cooking and stirring until the carrots are soften, about 8 minutes. Be careful not to cook the onions too long - may want to add them last if the slices are very thin or cut into smaller pieces. Sprinkle some Italian seasoning over the vegetables as they cook.
2. Add the sausage and heat, stirring, until it's hot.
3. Add the vegetable broth and the pasta. Bring to a boil. Cook, stirring constantly, until the pasta is al dente and the liquid is mostly absorbed, about 15 minutes.
4. Steam the bag of frozen spinach in the microwave. Stir the steamed spinach into the skillet when the pasta is cooked. Sprinkle more Italian seasoning over the ingredients as the pasta and spinach cook, if desired.
5. Serve while steaming hot and aromatic.
