King Cake Bubble UpThis is a Mardi Gras, Fat Tuesday, party cake ... but it's also good for serving with coffee at breakfast. You can hide the traditional items (small plastic baby or ring) in the cake for a Mardi Gras get-together, or skip that altogether (which I did). Ingredients:2 (12.4-oz) cans refrigerated Pillsbury cinnamon rolls Note: Use regular Pillsbury Cinnamon rolls, not the Grands version. 1 (8-oz) package cream cheese, softened 2/3 cup sugar 2 eggs 1 tsp vanilla 1 cup milk purple, yellow, green sugar Directions:1. Preheat oven to 375ºF. Lightly spray a 9×13-inch pan with cooking spray. 2. Separate cinnamon rolls, save icing to use after the bubble up is baked. Cut each cinnamon roll into 4 pieces. Place in bottom on prepared pan. 3. Using a hand held electric mixer, beat together cream cheese and sugar. Add eggs and vanilla, mixing well. Add milk and mix until combined. Pour over chopped cinnamon rolls. 4. Bake for 30 to 35 minutes. Remove from oven and cool for 5 to 10 minutes. Spread cinnamon roll icing over top of casserole. Sprinkle with colored sugar. It looks pretty much like this, especially if sprinkling the colored sugar on top. Attachment Deleted

What I Did:
1. With only serving 2 of us, I cut the recipe in half. I put the cut rolls into an 8X8 glass baking dish.
2. I used Raw Monkfruit instead of sugar; Swerve would work as well.
3. I frosted the rolls when they came out of the oven, but omitted the colored sugar.
4. I covered the dish with the leftovers and put them in the refrigerator. They saved well for the next day. They can be reheated, or not, the leftovers are great either way.
This was fun to make, and it was pretty quick & easy. I set the cream cheese out on a saucer and covered it with a paper towel, about 4 hours before I started putting together this recipe. The cream cheese was pretty soft and blended well.
