Reuben Quesadillas - REAL Simple
Serves 2 ... Takes about 15-20 minutes to prepare.
Great lunch sandwich. Great comfort food.
Ingredients:
4 (8-in.) whole-wheat flour tortillas
3 tablespoons Thousand Island dressing
4 ounces thinly sliced deli corned beef
6 tablespoons drained refrigerated sauerkraut
2 ounces shredded Swiss cheese (about ½ cup)
Chopped fresh flat-leaf parsley leaves
Directions
1. Spread tortillas evenly with Thousand Island dressing.
2. Top 2 tortillas evenly with corned beef, sauerkraut, and cheese; top with remaining 2 tortillas, dressing side down.
3. Heat a large nonstick skillet over medium heat. Add 1 assembled quesadilla to skillet; cook until browned, about 2 minutes per side. Transfer to a plate.
4. Repeat process with remaining quesadilla.
5. Cut quesadillas into wedges; top with parsley.

Comments on the Sauerkraut: There are probiotic benefits to using refrigerated sauerkraut. There's an interesting paragraph on the benefits of this sandwich at this link: www.realsimple.com/food-recipes/browse-all-recipes/reuben-quesadillas-recipe____________________ But, Realistically, LOL -- The 1,000-Isle Dressing makes the wheat tortillas messy enough. If I had added sauerkraut, I would not have been able to transfer the assembled quesadilla from the plate to the skillet, and it might not have held together to flip it over, and it would have been difficult to get it out of the skillet when it was done cooking. We did not miss the sauerkraut. ______________________ Other changes: 1. Instead of deli corned beef, I used a 12-oz can of Hereford Corned Beef. I broke it up with a fork, after removing it from the can, and spread it evenly over one tortilla that had been spread with 1,000-Island Dressing. 2. Instead of shredded Swiss cheese, I used 1-1/2 slices of Swiss on each of the 2 quesadillas. I laid the cheese neatly on top of the corned beef and topped it with the 2nd tortilla that had been spread with the 1,000-Island Dressing. 3. The assemble Reuben quesadilla took little time to brown on each side, so watch the quesadilla. It was a very tasty lunch sandwich, even without the sauerkraut.
