Old-Fashioned Custard Pie
So easy & quick to mix up. Most ingredients will be on-hand items.
Ingredients:
1 unbaked pie shell (I used a deep dish shell) 3 large eggs 1/2 cup of sugar 1/2 teaspoon of salt 1/2 teaspoon of nutmeg 2-2/3 cups of milk 1 teaspoon pure vanilla extract
Directions:
1. Pre-heat the oven to 350 degrees. Place a flat pan such as a cookie sheet onto the middle oven rack. This way, it will heat with the oven, in case it twists or pops slightly (so many do) as it warms up.
2. Beat the eggs slightly with a fork, then add sugar, salt, nutmeg, milk, and vanilla. Beat well - a fork or whisk works fine - and pour into the unbaked pie shell. ~ Be Careful ~ The filling will definitely fill up a deep dish pie shell.
3. Carefully set the pie onto the heated flat pan on the middle oven rack.
4. Bake for 35 to 40 minutes. If it's not quite done, bake up to 10 minutes longer. Remove from oven and cool. Sprinkle the top of pie with fresh ground nutmeg and serve.
It was suggested to me, since I sloshed pie filling onto the cookie sheet, that I might want to primp the defrosted pie crust so that it stands up and will hold the filling better. I'll try that next time.
