Goya Brand Black Bean Soup
Ingredients:
2 cans Goya Black Bean Soup Medium yellow onion cut in chunks Handful of MatchStick Carrots 1/2 tsp of Dried Basil 1/4 tsp Cumin Seeds or Powdered Cumin 1/2 tsp minced garlic (I used minced garlic in a jar) 1/4-1/2 cup low sodium vegetable broth
1-lb Turkey Breakfast Sausage, crumbled and fried
Directions:
1. Empty 2 cans of Goya Black Bean Soup, Prepared in Olive Oil, with Bell Peppers and Onion into a 3-qt kettle.
2. Saute the onion and carrots in olive oil cooking spray until the onion is translucent. Dump the onion chunks and carrots into the soup and stir.
3. Stir in the Basil, Cumin, and Garlic. Add enough low sodium vegetable broth to make the mix as "soupy" as you prefer.
4. Begin heating the soup until it comes to a boil. Turn the heat down to low and let it simmer for a few minutes until the delicious smell of it has your mouth watering.
5. Ladle the soup into bowls and add in the cooked, crumbled breakfast sausage as it suits your taste.

Note: I added chopped jalapenos in step 3. Probably not quite a 1/4 cup but definitely as many as suits your taste.

Today, I made it per the recipe, but had no breakfast sausage to include. So, I sliced up a package of smoked turkey sausage (like the semi-circle ring of sausage) and added that. For the spices, today I used 1/2 tsp cummin seeds; 1/2 tsp of Herbes de Provence; and a 1/2 tsp of jarred garlic. The soup needed 'something' to make it seem complete, so I added an additional can of black beans, plus a half can of Rotel-style tomatoes w/green chili peppers. They were a bit spicy, so I only used a half can. When the soup had simmered another 10-15 minutes after I added the tomatoes w/chilis, we dished it up into soup bowls and laid a slice of Havarti cheese across the top of each bowl. It was rich & savory tasty.

Barb, I made this with two cans of Goya Black beans, ( I hadn’t paid attention to the recipe calling for ‘soup’ lol), rotel, hot Italian sausage, hot pepper flakes and other stuff Yummy

Glad you liked it, Jeanette! I like it because it's so easy to make - and you can use whatever you have on hand, pretty much. I've added a can of black beans to make it go further and just added more broth, lol. We really like black beans, and they're pretty healthy.

In addition to the spices listed, I added:
1/2 tsp Dried Thyme 1/2 tsp Sage and I increased the Cumin to 1/2 tsp powdered Cumin
I also added:
2 tsp diced hot jalapenos 1/2 tsp cinnamon
I sauteed a pound of 93% lean ground turkey for the meat
It was even more savory than ever. We loved it.

Have I mentioned that frozen okra is an excellent addition to this soup? If you love okra as much as we do, toss in a handful or two after you've added all of the veggies you're using, plus seasonings, but before you add the cooked meat. After the okra thaws & gets hot, add the sausage. Bring the whole potful of soup to a boil, then turn it down to simmer for 10-15 minutes.

Today, we wanted a quick, tasty Friday night dinner. And didn't have much ready to put into anything. I decided to make this soup, and figured inspiration would strike for what to add. An opened bag of pre-cooked turkey meatballs in the freezer caught my eye. I popped a dozen meatballs into a microwave-safe broad bowl and heated them for 2 or 3 minutes to thaw them. I cut them into quarters and plopped them into the soup. When the soup began to boil, I turned it down & simmered the soup for about 10 minutes. The soup was delicious!
