Almond-Coconut Banana Bread in the Crockpot
Ingredients:
Nonstick cooking spray 1 cup almond flour 2/3 cup coconut flour 1 teaspoon ground cinnamon 1 teaspoon baking soda 1/2 teaspoon salt 2 eggs, lightly beaten 1 cup sugar or monkfruit sweetener 3/4 cup mashed bananas 1/2 cup coconut oil
Directions:
Step 1. Line a 4-qt oval slow cooker with parchment paper, then with foil. Coat foil with cooking spray. In a large bowl, stir together the flours, cinnamon, baking soda, and salt.
Step 2. In a medium bowl, combine remaining ingredients. Add egg mixture all at once to flour mixture; stir just until combined. Spoon batter into prepared cooker.
Step 3. Cover and cook on high 2 to 2-1/2 hrs, or until a skewer comes out nearly clean (center may dip slightly). When removing crockpot lid, carefully lift so condensation does not drip onto bread. Using parchment paper, lift out bread. Cool on a wire rack before removing paper and foil.

First time I made this, I used a cup of Monkfruit - and the taste was delicious. This time, I used 1/2 cup of erythritol and 1/2 cup of Monkfruit, and I could taste the erythtitol. Not pleasing.
