3 cucumbers, peeled and sliced 1/4-inch thick 3 tomatoes, cut into wedges 1 onion sliced and separated into rings
1 1/2 cup distilled white vinegar 1/4 cup extra virgin olive oil
2 teaspoons kosher salt 1 tablespoon coarsely ground black pepper
Combine vinegar, oil, salt, and pepper together in a large bowl; add cucumbers, tomatoes, and onion and stir to coat. Cover bowl with plastic wrap; refrigerate at least 2 hours.

We absolutely love this mixture! Sweetie doesn't like adding in the tomatoes, but I like them. We've come to a good meeting of the minds - we put in one Roma tomato, and it's all mine.

We've changed this a little bit, and if I don't put it in here, I won't be able to find it. (I have it scrawled in pencil on a piece of note paper with some friend's company name on it ) 2-3 medium, or 1 large cucumber, peeled & sliced in 1/4" slices. .... It's okay to peel off 3-4 strips & leave some strips of peel, if you like the peel .... If it's a large cuke, cut slices in half 1 medium onion, sliced & slices cut in half 1 Roma tomato, sliced in wedges & seed removed 1/2 cup apple cider vinegar 1/4 cup sugar 1/4 cup extra virgin olive oil 1 cup water 1 tsp salt - pink Himalayan, coarse kosher, or iodized table salt Place the vegetables in a medium to large bowl, depending on the amount of vegetables. Mix together the liquids in a separate bowl and pour over the vegetables. Mix the vegetables with the liquids. If there's not quite enough liquids to suit your preference,add up to an additional half cup of water and a half cup of apple cider vinegar. Marinate in the refrigerator for at least 2 hours before serving. Stir occasionally while marinating. Stays good for up to 3 day in the refrigerator.

I made a batch of this today using dark balsamic vinegar since that was the only vinegar that I happened to have on hand right now and I didn't want to bother someone to take me to the store for just a bottle of venegar.
I thought that gave it a really good taste.

I thought that gave it a really good taste. I'll bet it did! I'm going to ask Edward to try the balsamic vinegar because we both like it. I don't have any cucumbers at the present, and we're low on onions too , but I'll probably get some of each later this week.
